Had a request for the recipe for green tomato chutney that we used last summer. Very good!
5 cups firm green tomatoes
1 seeded diced lemon
1 clove garlic, minced
2-1/4 cups dark brown sugar
1-1/2 cups seedless raisins
3 ounces crystallized ginger, cut fine
1-1/2 teaspoons salt
1/4 teaspoons cayenne pepper
2 cups vinegar
2 seeded minced green peppers
Simmer all ingredients until the tomatoes are tender but not too soupy. Put in sterile jars and seal. (Water bath).
Oh that sounds yum!

ReplyDeleteStephanie--She has also made cranberry chutney that is real good, and rhubarb chutney that is good, but not as good as the other two. Recipe needs to be tweaked a little.
ReplyDeleteLeigh--I think you will like it. Very good on sandwiches. Even on a peanut butter sandwich!
